From homemade birthday cakes and fancy dinner party desserts to simple sweet lunchbox fillers, baking is how I love to treat people close to me and make them feel special. It's something I inherited from my grandmother, who would never let you leave her house without a slice of cake and a cup of tea; she taught me that the greatest joy of baking is sharing the results. As February is a month dedicated to love, - not only sweethearts but self-love and relationships with family and friends, I thought I would share some of my favourite, delicious and super easy recipes that you can bake and share with your loved ones.
Nothing says Valentines quite like chocolate!
I love a simple all in one recipe where you can throw all the ingredients into a bowl, give it a quick beat and it’s ready to bake.
These are the perfect bakes to get your littles involved, just pre - weigh everything out first!
NUTELLA & CINNAMON MARBLE CAKE
Prep: 20 mins Cook: 1 hrs 10 mins Serves 12
Ingredients
175g softened butter
175g golden caster sugar
3 eggs 200g self-raising flour
1 tsp baking powder
2 tsp ground cinnamon
4 tbsp milk
4 rounded tbsp Nutella
Method
1.Preheat the oven to 180C/gas 4/ fan 160C.
2.Butter and line the base of a 20cm round cake tin.
3. Put the butter, sugar, eggs, flour, baking powder, cinnamon and milk into a bowl. Beat with a wooden spoon for 2-3 minutes, or with an electric hand mixer for 1-2 minutes, until light and fluffy.
4. Tip three quarters of the mixture into the tin, spread it level, then spoon the Nutella on in four blobs.
5. Top with the remaining mixture, swirl a few times with a skewer, then smooth to cover the Nutella.
6. Bake for 1 hour to 1 hour 10 minutes, until risen, nicely browned, feels firm to touch and springs back when lightly pressed (cover with foil if it starts to brown too quickly).
7.Cool in the tin for 10 minutes, then turn out, peel off the paper and cool on a wire rack. Wrap tightly in double thick foil to keep fresh for up to a week.
Nutella chocolate cupcakes
Prep: 20 mins Cook: 20mins makes 12
Ingredients
100g plain flour
20g cocoa powder
140g golden caster sugar
1 1/2 tsp baking powder
a pinch of salt
40g butter, at room temperature
1 egg
120ml whole milk
120g nutella
Nutella frosting
250g icing sugar, sifted
80g unsalted butter, at room temperature
25ml whole milk
80g nutella
Method
1. Preheat the oven to 180C/gas 4/ fan 160C.
2. Put the flour, cocoa powder, sugar, baking powder, salt and butter in a freestanding electric mixer (or use a handheld whisk) and beat on slow speed until you get a sandy consistency and everything is combined.
3. Slowly pour the milk into the flour mixture, beating well until all the ingredients are well mixed.
4. Add the egg and beat well, scraping any unmixed ingredients from the side of the bowl with a rubber spatula.
5. Spoon the mixture into the papercases until two-thirds full and bake in the preheated oven for about 20minutes, or until the sponge bounces back when touched.
6. Leave the cupcakes to cool slightly in the tray before turning out onto a wire rack to cool completely.
For the nutella frosting:
Beat all the ingredients together in a freestanding electric mixer (or use a handheld whisk) on slow speed until well mixed and it comes together.
Turn the mixer up to high speed and continue beating until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten the fluffier and lighter it becomes.
